Zucchini Pizza Bites

A friend posted a picture of these and we couldn't wait to try them. They are super easy to make and a great side dish, although I may have eaten an entire sheet for dinner.
You will need:

  • Zucchini (I also used yellow squash, which turned out pretty well too.)
  • Pizza sauce
  • Cheese
  • Toppings (I used diced ham and small pieces of broccoli)
  • Cookie sheet, non-stick spray
1. Preheat oven to 450 degrees F.
2. Grease cookie sheet with the non-stick spray.
3. Slice zucchini into slices, about 1/4" thick and place on cookie sheet.
4. Top with sauce, cheese, toppings.
5. Bake for 15 minutes.
6. Remove from oven and let cool for a minute or two, as these are really hot.
