Enchilada Pie

Total Time: 45 minutes to 1 hour. It doesn't look pretty, but it tastes delicious!

For this dinner you will need:
  • 1 lb. ground beef
  • (1) 14 1/2 oz can cream of chicken soup
  • 1 onion, chopped
  • (1) 14 1/2 oz can tomato sauce
  • (1) 14 1/2 oz can whole crushed tomatoes, drained
  • 1 package (2 cups) shredded Colby Jack cheese
  • 1 envelope enchilada seasoning
  • 6 tortillas
  • Misc.: non-stick cooking spray, skillet, baking dish (an 8x8 works well), vegetable oil


Directions:
1.   Preheat oven to 350 degrees F. 
2.   Brown meat and onion. Drain if needed.
3.   In a saucepan, cook soup, crushed tomatoes, tomato sauce, and seasoning until heated through.
4.   Add browned meat and onions and simmer on low heat.
5.   Heat tortillas until they are warm (but still soft). If you are not using a non-stick pan, use a little oil to coat the pan so the tortillas don't stick.
6.   Grease baking dish. Place 4 tortillas in the dish to form the bottom layer.

7.   Add half of the meat mixture.
8.   Sprinkle half of the cheese over the meat layer.

9.   Repeat layers: 2 tortillas, meat layer, cheese layer.
10. Bake for 30 minutes.
11. Enjoy!


Alternatives:
  • Add a layer of refried beans on top of the base tortilla layer before adding the meat and cheese layers.
  • Serve with a side of sour cream, chips, and salsa!
