Broiled Parmesan Crusted Zucchini

(As a side note, this is my hubby's favorite veggie creation.)


You will need:
Zucchini
Butter
Parmesan Cheese

Directions:
Preparing zucchini
  1. Turn oven to Broil and move a rack to the top.
  2. Slice zucchini lengthwise (about 1/8 to 1/4" thickness).
  3. Place on cookie sheet.
  4. Score tops of zucchini 3-4 times.
  5. Add thin layer of butter, tiny pats, or a squirt of butter.
  6. Sprinkle on Parmesan Cheese. (Above picture has grated Parmesan, but the shredded works really well and gives it a different texture.)
  7. Place on top rack and broil until cheese is browned. This usually takes 5-10 minutes, but keep a close watch on it because it can burn quickly!
