Welcome! I am a mom to two wonderful kids, a lovely retired greyhound, and a wife to a great husband. Needless to say, there are a lot of daily messes to clean up around our house. Daily Messes is my blog to share ideas on things to do with your kids, snack and meal ideas, crafts, and holiday fun. I hope you find something to enjoy!

Personal Egg Cups

If everyone wants something different in their scrambled eggs these are the perfect solution!

Serves 6. Prep time: 10 minutes, Cook time: 20 minutes

You will need:

  • 4 eggs
  • 1/2 cup milk or half and half
  • 1/2 tsp salt (optional)
  • Mix-Ins: sausage, bacon, ham, diced peppers, diced tomatoes, shredded cheese
  • Parmesan cheese (optional)
  • Muffin pan
  • Non-stick spray

  1. Preheat oven to 350 degrees F.
  2. Spray muffin pan with non-stick spray.
  3. Mix together milk, eggs, and salt with a whisk.
  4. Fill 6 muffin cups evenly. Add in mix ins (about 1-2 Tablespoons). If you like Parmesan, sprinkle a little on top.
  5. Bake about 20-25 minutes, or until puffy and have golden brown edges.
HINT: If everyone likes the same thing, just whisk the mix-ins, eggs, and milk together before filling the muffin pans.
