Welcome! I am a mom to two wonderful kids, a lovely retired greyhound, and a wife to a great husband. Needless to say, there are a lot of daily messes to clean up around our house. Daily Messes is my blog to share ideas on things to do with your kids, snack and meal ideas, crafts, and holiday fun. I hope you find something to enjoy!

Chicken Nacho Bake

Tired of the same old baked chicken? Try this recipe (it's always a big hit at my house)!

Prep 10 min. Total 40-50 min. Makes 4 servings.

You will need:
  • 1 lb boneless/skinless chicken breasts
  • 1/2 cup salsa
  • 1/4 sour cream
  • 1/2 cup crushed tortilla chips
  • 1/2 cup Mexican style 4 cheese, shredded

Directions:
  1. Preheat oven to 400 degrees F.
  2. Place chicken on foil covered baking sheet.
  3. Slice 3 cuts on top of each chicken breast.
  4. Top each chicken evenly with salsa, sour cream, and chips.
  5. Bake 20 minutes. Remove from oven; sprinkle with cheese.
  6. Bake 10 minutes, or until chicken cooked through.
