Flower Cookie Cupcakes

We had a gray rainy kind of day and I wanted something cheery, so we made flower cookie cupcakes. These were a huge hit with the boys and would be great for a tea party or picnic.

Total Time:1 hour
Serves:12-15. I only made twelve because I was lazy and didn't want to wash another cupcake pan, but I had extra dough that could have made three more.

You will need:
  • (1) 16 oz. package of sugar cookie dough (or your favorite recipe)
  • Chocolate cookies, crushed
  • Green gummy slices or leaves (I could only find the mixed colored candy fruit slices at the store. I did find these Boston Fruit Slices online after I made the cupcakes. They look a lot thinner and you can order in only green; I haven't tried them yet, so I don't know how they taste.
  • 12-15 caramels
  • 12-15 lollipops (small)

Directions:
1. Preheat oven to 350 degrees F.
2. Grease muffin pan.
3. Remove dough from refrigerator and let sit for 10-15 minutes at room temp.
4. Separate dough into 12-15 balls. Place ball in muffin pan and press against sides and bottom.
5. Next, place caramel in the center.
6. Bake about 10 minutes, until lightly browned.
7. Remove from oven and cool.
8. In the center of each cookie, sprinkle cookie crumbs.
9. Push in 1 lollipop. 
10. On either side, press in leaves. I thought the gummy slices were too thick, so I sliced them in half.

DM Tip: The cookie crumbs tend to fall off if the cupcake is tipped over. You could spread a thin layer of icing on top of the cookie cupcake and then put the cookie crumbs on to help them stick.
