My Very Own Crumb Coffee Cake


Hubby wanted to bring in something for work and was thinking along the lines of coffee cake. He wanted a crumble top and a layer of filling in the middle. However, I know from past experience that bringing in something that has be to cut at work can be a pain. So instead I made individual coffee cakes! These would also be great at a holiday party since everyone can just grab and go.

Makes: 24 cupcakes

For the batter, you will need:
  • 8 cups flour
  • 1 cup sugar
  • 5 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 2 cups packed light brown sugar
  • 4 teaspoons vanilla extract
  • 3 teaspoons ground cinnamon
  • 2 cups butter, melted and cooled down
  • 4 tablespoons canola oil
  • Cupcake/Muffin pans and wrappers (I think the foil ones work best.)
  • Non-Stick spray
Filling:
  • 1 cup packed brown sugar
  • 1 cup finely chopped nuts (I used pecans, but walnuts would be great too.)
  • 2 teaspoons ground cinnamon
Drizzle:
  • 1 cup powdered sugar
  • 2-3 teaspoons milk
  • Saucepan


Directions:
1.   Heat oven to 350 degrees F and place rack in the center of the oven.
2.   Place wrappers in pan and lightly spray with non-stick spray.
3.   Mix together 3 cups of the flour, baking powder, salt, and sugar.
4.   Stir in eggs, milk, vanilla, and canola oil. Mix together.
5.   Place a small spoonful of batter in the bottom of each wrapper. Set aside.
6.   Combine the ingredients for the filling.
7.   Add a layer of filling on top of the base batter.
8.   Add a second layer of batter.
9.   Mix together the remaining 5 cups of flour, cinnamon, and brown sugar. I found it best to break up the packed brown sugar and mix the dry ingredients together.
10. Stir in the melted (but cooled off) butter with a rubber spatula or a spoon into the flour/cinnamon/brown sugar mix until crumbs form.
11. Place crumbs on top of each coffee cake.
12. Bake for 15-20 minutes, or until a toothpick comes out clean. DM Tip: I rotate my pans halfway through baking since the front tends to be hotter than the back of the oven.
13. Cool. DM Tip: I found if I placed on a cooling rack in the freezer for a few minutes, they cool off quickly.
14. Once it is cooled, make the drizzle. Place the milk and powdered sugar in the saucepan and heat over medium-low heat until melted and clump free.
15. Drizzle over crumb cakes.
16. Enjoy!
