White Chicken Chili


This is a big hit at my house. It cooks in the crock pot, so it is great to put on in the morning and have ready at dinner time! (This takes about 5 1/2 hours.)

You will need:
  • 1 lb. chicken, cut into small pieces
  • 1 cup onion, chopped
  • 1 can chicken broth
  • 2 cloves garlic, minced
  • 2 tsp. Cumin seed
  • 1/2 tsp. dried oregano leaves
  • 1 or 2 bell peppers (yellow, red, or green), seeded and chopped
  • (3) 15 oz cans white beans (Cannellini, Great Northern. For extra flavor add a can of Butter Beans.)

Directions:
1. In the crock pot, combine onions, broth, garlic, cumin, oregano, and chicken.
2. Let cook on low for 3-5 hours and then add drained beans. Cook 1 more hour.
3. Add peppers in last 1 hour of cooking.
4. Top with shredded cheese and/or crushed tortilla chips before serving.
